Barbecue, barbecue, and roast are synonymous with grilled meat. Depending on the place, they can be different types of meat (chicken, veal, lamb, pork …) and even some vegetables, but it is difficult to find one that falls outside the norm. But if you are looking to prepare a different one, here are seven original ideas to surprise on your barbecue.
As an advance, I can tell you that we are going to see a very special way of cooking meat, we will also discover what is a matambre to the book and, above all, the amount of things we can cook on the grill, and we would never imagine.
Meat to the coal, not to wait for the embers:
The other day, reviewing the 11 mistakes that we should avoid when preparing a barbecue, we made it clear that it was very important to wait until the embers were ready to start roasting the meat but, what if we do not have that time or just want to to get something out of itching? Well, then the solution is this charcoal meat. There is this amazing place called 357bbqpocha. This restaurant will make sure that you have great experience and fun time with your loved ones.
The recipe and the video are from Alton Brown, both in English, but since the recipe is extremely simple, I’ll tell you:
First, we salt the meat and let it temper at room temperature for 60 minutes. In the video uses a cut, the stirk steak, whose equivalent in our quartering is the entraña (thanks to Chus51 for the contribution in the comments). It is located between the skirt and the lower part of the rib, corresponding to the area under the animal’s diaphragm.
The second step is to light the charcoal and, attention, put the meat directly on the hot charcoal, between 30 and 45 seconds on each side. As Alton says in the video, yes, it will stick some ash, but nobody has died from eating a little from time to time.
After passing through the charcoal, wrap the meat in abundant aluminum foil, and let it finish cooking in its own heat for about 15 minutes before cutting it into strips (recommended to cut as opposed to vein) and serve it.
Matambre to the book, for the most famished
I think I’ve never been to a barbecue where I was hungry and there was no food left, but if you have guests whose stomach seems to have no background, my recommendation is that you prepare this Matambre to the book, perfectly explained by the Crazy guys for the Asado.
The matambre is a piece of the pig that is very similar to our secret, with its abundant fat interspersed. This is an advantage when cooking it on the grill, because it will make it juicy. In the video step by step is explained in detail, but I summarize it briefly:
We have the piece of meat spread on the table, with the grease down (so it is on the outside of the book)
On the meat, place mozzarella cheese, roasted peppers, olives, onion, dried tomatoes and fresh basil.
We fold the meat to form a book and we sew it with thick thread
Grilled meat with a splash of lemon, salt and pepper
To chop, grilled cucumber
The cucumber is perfect for biting on a barbecue: it is fresh, it entertains us while we wait for the meat and it does not fill. Prepare it on the grill is simple, cut into segments (better to be small cucumbers), salpimentamos and paint them with oil before passing them through the grill for 45 seconds.
Then, if we want them to have the touch of pickle vinegar, we can put them in a jar with white vinegar and spices, covered for an hour.
The salad, also grilled
Does anyone eat salads at barbecues? Well, someone will be there, but usually they stay there sad, waiting for someone to listen to them. Well, if you do not want this to happen, you can make the salad also on the grill.
The key is to cut the romaine lettuce in half (lengthwise) and pass it through the grill until it is crispy on the outside, and tender on the inside. Then we can cut it and mount a normal salad or fill it. The rest of the ingredients that you want to put can also be tried on the grill: asparagus, tomatoes, zucchini … although it is not necessary either.
Veal and bacon pumps
Its name in English is Moink, which responds to the combination of the sounds made by the veal (Moo) and the pork (Oink), and it is beef dumplings covered with bacon and grilled, often watered later with barbecue sauce. You will understand why I have called them veal and bacon pumps
Yes, you read correctly, lemonade the grill. How? Well then preparing a lemonade with lemons that we have gone through the grill, which will make them caramelicen and give a spectacular flavor. We simply cut the lemons in half, we impregnate them with sugar and we pass them through the grill for 10 minutes, until they start to caramelize. Then we prepare the lemonade following the usual recipe.
Of course, the dessert is also grilled
Have we already made all the meat and still have embers left? Great! Because we can also prepare the dessert on the grill. And it is that almost any fruit feels good to spend a while by the embers. Bananas, peaches, watermelon … we can cook them as is or add a touch of oil and paprika, which will enhance the flavor.
